WINES
Our RoSaH rosato is made from Sangiovese and Viognier grapesgrown next to the small town of San Damiano just outside of Todi. The grapes are harvested, crushed and gently pressed as quickly as possible. The wine is then cold co-fermented in stainless steel tanks, filtered and bottled, all as quickly as possible to preserve the fresh fruit aromas and flavors for our customers' enjoyment. It has a lovely light pink colour, delightful floral notes and a well-balanced flavor with a nice crisp finish. Perfect for a warm summer afternoon, or frankly any season where a fresh crisp wine is desired.

Our RoSaH rosato is made from Sangiovese grown by the Tovo vineyard, immediately next to the small town of San Damiano, and Viognier grapes. The rosato grapes are harvested, crushed and gently pressed as quickly as possible. The wine is cold fermented in stainless steel tanks, filtered and bottled, all as quickly as possible so that it would hold on to its forward fruit for our customers' enjoyment. It has a lovely light pink colour, delightful floral notes and a well balanced flavor with a nice crisp finish.

The Sangiovese is grown on our own Tenuta Montorsolo vineyard in the San Damiano area. It was fermented in stainless steel tanks, it was then racked into French oak tonneau cooperage (500 litres each) to be aged for 15 months. Upon removal from the tonneau, the wine was given a final filtration and then bottled. Once bottled, we age the wine for six months before release.

The Cabernet Sauvignon is produced from a small vineyard in the Fiore area near Todi, owned by the Øiestad family. This wine is produced much like the Merlot with 15 months in new and seasoned Darnajou cooperage. After fermentation in stainless steel tanks the wine is then aged for 15 months in French oak, using a blend of barrique and Tonneau cooperage. Six months of bottle aging prior to release has allowed the wine to further develop.

The Merlot is produced from our own Tenuta Montorsolo Vineyard. It is our first Todi DOC wine. It is fermented in stainless steel tanks. After fermentation the wine was aged for 15 months in Darnajou cooperage made of French oak barrique (225L) and Tonneau (500L). After barrel ageing the Merlot was filtered then bottled. It was bottle aged for 6 months to allow for further development before release.
